About This Wine

A silky, comforting style reminiscent of lithe Chablis. The 2021 release is a blend of fruit from the Tamar and Derwent Valley. Pressed into old oak casks and left to enjoy a wild fermentation. Maturation took place over 9 months on lees. Some of the casks contained small proportions of whole clusters.

96pts "Tamar Valley & Derwent Valley grapes. Older oak. No North, South, or East in 2021. So I guess this is North & South. This is kind of how Chablis should be, given a whole lot of it these days is too ripe and gluggy. Saline, white peach, honeyed almond and green apple, a little unmami something, maybe some preserved lemon. Tight, brisk, but has flavour, a lot of flint through a glossy texture, wheatgerm and brine, sour apple tang, intense and long. Lip-smacking and energetic, yet already complex. The latest spring 2021 release showcases the versatility and energy Dr Edge has become famous for. Included is a new trio of blends including a lively chardonnay blend, a textural skinsy number and a frisky fridge-friendly red rounding the range out.
The world of Tasmanian riesling has also been conquered with 4 rieslings that encapsulates each microclimate of the tiny island.
