About This Wine

Of the 20 years winemaker Dave Chapman has been making wine on the Mornington Peninsula, he has marked his 2021 release as his best vintage yet. 

The Merricks site is nestled on a high east-west ridge. What can be a cold site, the sun provides gentle warmth to the 33 year old vines. The wine was whole bunch pressed to a solo barrel for a wild fermentation. Matured for a total of 10 months and bottled without fining nor filtration.

Allies is the consequence of an intense passion for wine from former chef and sommelier; Dave Chapman. What started as a couple barrels in 2003 of Pinot Noir from Tuerong, Mornington Peninsula has now grown to what Dave can manage alone. Expressing the many facets of the peninsula, he now bottles several Pinot Noirs from different townships. He has also recently purchased a property in Gippsland, with the wines becoming available in 2024.

Dave adheres to the French viticultural approach; ‘Lutte Raisonée’ (translated as reasoned fight). This sustainable and ‘old school’ approach focuses on soil health to allow vines to fight diseases themselves as well as integrated pest management and cover crops.
