About This Wine

Regarded as an excellent vintage, winemaker Dave Chapman totes his 2021 wines as the best he's made yet. The Tuerong site is amongst the warmest on the Peninsula, shown in the bolder fruit spectrum and weight of this Chardonnay. 

With freshness in mind, this Chardonnay was picked early before being whole bunch pressed. Fermentation took place in a lone 3 year old puncheon where wild yeasts were allowed to take the steering wheel. Maturation lasted for 10 months in barrel before being bottled without fining nor filtration.

Allies is the consequence of an intense passion for wine from former chef and sommelier; Dave Chapman. What started as a couple barrels in 2003 of Pinot Noir from Tuerong, Mornington Peninsula has now grown to what Dave can manage alone. Expressing the many facets of the peninsula, he now bottles several Pinot Noirs from different townships. He has also recently purchased a property in Gippsland, with the wines becoming available in 2024.

Dave adheres to the French viticultural approach; ‘Lutte Raisonée’ (translated as reasoned fight). This sustainable and ‘old school’ approach focuses on soil health to allow vines to fight diseases themselves as well as integrated pest management and cover crops.
