These vineyards have varied alluvial soils with a high proportion of New Zealand’s greywacke river stones. The grapes were lightly pressed to yield modest volume, high quality juice. Before fermentation, the juice is cold settled and racked before being transferred to stainless steel. A portion of juice went to old oak barrels for a wild yeast fermentation.
