About This Wine
This Chardonnay sees no oak whatsoever and spends 5 months on lees to build breadth. Everything is picked by machine and pressed immediately to capture ultimate freshness. Only gravity (rather than pumps) are used to fill tanks. No oak is used for the Petit Chablis, this is prime Chardonnay liveliness.
Stephanie and Vincent Michelet is a producer to watch out of Chablis. After working in Alsace, they received a land grant for Chablis in 2007 and decided to combine the estate with Stephanie’s father; Jean-Claude of Domaine Jean-Claude Courtault.
The two domaine labels remain under Stephanie’s winemaking care but they split the labels according to two different styles. Based on soils of course, it is Chablis after all! Clay dominant soils around Lignerolles are fruitier, then the limestone soils offer more mineral driven characters and form the key personality trait for the Stephanie et Vincent Michelet label.
