About This Wine

Appassilento refers to the Veneto winemaking technique from way back when; 'apassimento'. Grapes are dried for a couple months to concentrate flavours and are then pressed and fermented to dryness. This lengthy process or 'lento' results in a dry red wine that has alluring, rounded red berried flavours whilst retaining incredible freshness. 

This wine itself is an unorthodox blend of Corvina, Cabernet & Merlot. Fermented cool and slowly in two stages before settling in stainless steel and a couple months in Slavonian oak. 

If you aren't prepared to shell out for Amarone or can't hack the heft, then this is an excellent introduction to Veneto reds.

Farina was founded in the early 1900s with a passion and desire for producing the highest quality wines possible from the Veneto region. Cousins Claudio and Elena Farina, now 3rd generation are responsible for the continuity of the Farina tradition. They oversee all elements of production and evolution of their family business.

 

All wines from Farina are produced with a key focus on sustainable farming and ongoing care of vine health. Whilst not certified organic, Claudio and Elena are attentive to this cultivation method. No pesticides are ever used, and natural techniques for pest control are encouraged.
